Simple Sri Lankan Pancake

This is the first recipe we have received from Priya who lives in New Zealand. Thanks for sharing this delicious pancake with us Priya.

Priya says “This pancake brings her back the sweet old memories during her school times in Sri Lanka where these pancakes were sold at the school canteen. She recommends it as a perfect evening snack especially during a rainy weather where you can have it with a cup of tea/coffee”.



Sri Lankan Pan Cake

  1. Plain flour - 250 Grams
  2. Turmeric powder - 1/4 Teaspoon/as needed
  3. Coconut (grated) - 125 Grams
  4. Green gram dhal (Boiled & drained) - 100 Grams
  5. Jaggery/Sugar - 50 Grams
  6. Cardamom powder - 1 Teaspoon
  7. Baking Soda - a pinch
  8. Salt - as needed
  9. Oil for greasing the pan
  10. Water - as needed
  1. Sift the flour, baking soda and turmeric powder together.
  2. Cook the green gram until soft and set aside.
  3. Add the sifted flour mixture in a bowl, add enough water and salt to make like a dosa batter. set aside.
  4. Melt the jaggery in a pan and add grated coconut and cooked green gram dhal gradually.
  5. When the mixture start to become thick, add the cardamom powder and stir to combine well together.
  6. Leave the mixture to cool for 10-15 minutes.
  7. Heat the roti making griddle/tawa and add a drop of a oil and pour a spoonful of batter in the center.
  8. Spread the batter in a circular motion.
  9. When the pancake starts to cook add 2 tablespoons of the coconut mixture and slowly roll the pancake from one edge to other. Turn and cook slowly for another 30 seconds.
  10. Do the same with remaining batter.
  11. Serve hot.
  1. You can make this pancake without adding Green gram/moong dhal.
